Luau Chicken Skewers Recipe

Ingredients

Scale

2 lbs Boneless Skinless Chicken Breasts

3 Bell Peppers, chopped

1 Onion, chopped

2 Cups Pineapple Chunks (reserve juice)

2 TBS Zipp Zapp Zopp seasoning

2 TBS Mango Chipotle Spice Rub

Teriyaki glaze

1 Cup Soy Sauce, reduce sodium

1 Cup Reserved Pineapple Juice

1 TBS Yin & Yang Chinese 5 Spice Powder

1 TBS Hoisin Sauce

Instructions

  1. Preheat your grill to 400 degrees.
  2. Add all glaze ingredients to saucepan on medium high heat.  Bring to boil, reduce to simmer.  Continue reducing until you have 1 cup remaining.
  3. Slice Chicken, Onion, and Peppers in 1” chunks.
  4. Place all ingredients except glaze in a bowl and thoroughly mix until well coated. Marinate for 1 – 4 hours.
  5. Start assembling your kabobs by alternating your colors & ingredients until each skewer is full.
  6. Place on grill to seer & then reduce heat to about 350 degrees.
  7. Grill approximately 10 minutes on each side or until juices run clear on your chicken when cut.
  8. Brush on teriyaki glaze & cook another 5-7 minutes.
  9. Remove & enjoy immediately!

Notes

Add orange juice if not enough reserved pineapple juice.
